# Steps:

01 - Heat olive oil in a large skillet over medium heat. Add diced onion and cook for 3-4 minutes until translucent.

# Expert Advice:

01 -
  • One skillet means you can go from stove to table in thirty minutes with almost no cleanup.
  • The salty brine from olives and the tangy creaminess of feta do all the heavy lifting for flavor.
  • It feels indulgent and restaurant-worthy but fits perfectly into a keto or low-carb rhythm.
  • Leftovers taste even better the next day when the flavors have mingled overnight.
02 -
  • Ground chicken can dry out quickly, so don't overcook it or crank the heat too high.
  • The lemon juice must go in after you remove the skillet from heat or it loses its bright, zingy edge.
  • If your feta is pre-crumbled, rinse it briefly under cold water to remove excess brine and prevent the dish from getting too salty.
03 -
  • Taste the olives before you add extra salt, some brands are much saltier than others.
  • Let the skillet rest off the heat for a minute before serving so the flavors settle and the feta softens just slightly.
  • If the chicken starts sticking, add a splash of water or broth to deglaze the pan and create a light sauce.
