# Steps:

01 - Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion, bell pepper, and celery. Sauté for 5 to 6 minutes until vegetables are softened.
02 - Stir in minced garlic and cook for 1 minute until fragrant.
03 - Add smoked paprika, dried thyme, dried oregano, ground cumin, cayenne pepper, black pepper, and sea salt. Stir well to coat vegetables evenly in the spice mixture.
04 - Pour in drained black-eyed peas, vegetable broth, soy sauce, and bay leaves. Stir to combine thoroughly.
05 - Bring to a gentle simmer, reduce heat to low, and cook uncovered for 20 to 25 minutes, stirring occasionally, until the mixture thickens and flavors meld together.
06 - Remove bay leaves. Taste and adjust seasoning as needed.
