01 - 2 cups plain or vanilla Greek yogurt (full-fat or low-fat)
02 - 2 tbsp honey or maple syrup
→ Fruit
03 - 1 cup mixed red berries (strawberries, raspberries, red currants; sliced if large)
→ Crunch & Garnish
04 - 2 tbsp chopped pistachios or almonds (optional)
05 - 2 tbsp unsweetened shredded coconut (optional)
06 - Zest of 1 lemon (optional)
# Steps:
01 - Line a 9x13 inch baking sheet with parchment paper.
02 - Combine Greek yogurt with honey or maple syrup in a bowl and mix until smooth.
03 - Evenly spread the yogurt mixture onto the prepared baking sheet to about 1/3 inch thickness.
04 - Distribute the mixed red berries evenly over the yogurt layer.
05 - Sprinkle chopped nuts, shredded coconut, and lemon zest over the berries if desired.
06 - Lightly press toppings into the yogurt to help them adhere.
07 - Place uncovered in the freezer for at least 3 hours until completely firm.
08 - Remove from freezer, lift from parchment, break or cut into pieces, and serve immediately or store frozen.
